Method

  1. Bring a large pot of water to boil. Line a large baking sheet with parchment paper. Brush the paper lightly with 1 Tbsp. oil.
  2. Preheat the oven to 375˚F. Add frozen perogies to boiling water, return to a boil, and cook two minutes. Lift perogies out of the pot, drain well, and set in a single layer on the baking sheet.
  3. Bake perogies 10 minutes. Remove from oven and top with cheese, peppers, green onions and olives, if using. Return to oven and bake 8 to 10 minutes more, or until the cheese is melted.
  4. Top perogies with cilantro sprigs and serve with salsa and sour cream.

Recipe Options: For a spicy kick, replace the green pepper with 1/3 cup thinly sliced, fresh jalapeños. Instead of cheddar, use Monterey Jack cheese.
