Preheat oven to 325 degrees F. Heat the oil in a Dutch oven or ovenproof pot set over medium-high heat. Season the roast with salt and pepper and sear it on all sides. Carefully drain the excess fat from the pot. Add the remaining ingredients and bring to a simmer. Cover and cook in the oven for 2 1/2 to 3 hours, or until the meat is very tender. Remove the roast from the pot and slice. Ladle the sauce in the pot into a gravy boat and serve alongside.
