Method

Scrub potatoes well, but do not peel. Cut potatoes into 1/4’s and then place in a pot. Cover with cold water. Boil until just tender, drain well, and then place in a bowl. Mix in the remaining ingredients. Cool the salad to room temperature. Cover and chill well before serving.

Serving Suggestions

This moist and delicious salad goes great with burgers, deli meat sandwiches, barbecue chicken, and salmon. Or try in on a cold plate with sliced meats, cheeses and pickles.
