Method

Heat the butter in a pot over medium heat. Add the onions and garlic cook 10 minutes, until soft and a rich golden colour. Add stock, herbs and tomato paste and gently simmer 30 minutes. Stir in the sherry, green onions and season with salt and pepper. Pour soup into bowls. Garnish top with stilton and serve.

Serving Suggestions

A dry glass of sherry and, if desired, extra crumbled stilton to sprinkle on top, is all you’ll need to serve with this flavour-filled soup.
