Method

Combine the first 6 ingredients in a small pot and whisk to combine. Mix in the apple and bring to a simmer. Simmer 3 to 4 minutes, season with salt and pepper, and then cover and reserve on low heat. Season the pork with salt and pepper. Heat the oil in a large skillet set over medium-high. Add the pork and cook 3 minutes per side, or until cooked through. Plate the pork, top with sauce, and serve.
