Preheat oven to 350 degrees F. Beat eggs in a bowl and then mix in sour cream, brown sugar and flour. Place tart shells on a baking sheet. Pour in egg mixture to with a 1/8 inch of the top. Set a peach slice on one side of the tart. Arrange 4 half cherries on the other. Drizzle top with any remaining egg mixture.
Bake 30-35 minutes, or until golden and filling is set. Cool tarts on a rack to room temperature. Remove from tins and arrange on a plate. Dust with icing sugar, garnish with mint, and serve.
Note: Tart shells are sold ready to use in the frozen foods section.
