Preheat the oven to 350 degrees F. Place the tarts on a baking sheet lined with parchment paper.
Place the eggs in a medium bowl and beat well. Mix in the maple syrup, brown sugar, butter and vanilla. Place an equal amount of pecan pieces and caramel chips in each tart shell. Divide and pour the egg mixture into the tart shells, filling them right to the top.
Bake for 22 to 25 minutes, or until the filling is set. Cool to room temperature, and then cover until ready to serve. When ready to serve, remove tarts from their foil liners, set on a serving tray, and enjoy.
