Method

Put meat, stock, and onions in a heavy, tall soup pot. Gently simmer 30 minutes, or until meat is tender. Skim top of any foam during this process. Stir in remaining ingredients and simmer until vegetables are tender, about 15-20 minutes. Adjust seasoning and serve.
