Preheat the oven to 425 degrees F. Line two large baking sheets with parchment. Set the pita on the baking sheets. Spread the top of the pita with the tomato sauce. Sprinkle the sauce with the oregano and basil. Top the pita with the cheese. Arrange the pepperoni, bell peppers and mushrooms on top of the cheese. Bake the pizzas, one sheet at a time, 8 to 10 minutes, or until the cheese is melted and the bottom of the pita is crispy. Cut and enjoy the first two pizzas while you bake the others.

Note: Greek or Souvlaki-style pita is available in the deli.

Recipe Options: Instead of tomato sauce and oregano or basil, top the pita with your favourite ready-to-use pizza or tomato-based pasta sauce. After adding the sauce and cheese, top the pita in any other way that suits your taste, such as with ham and pineapple, or grilled eggplant, goat cheese, pine nuts and roasted peppers. Baking time will remain the same.
