Method

Preheat oven to 400 degrees F.

Line a baking sheet with parchment paper. Boil the potatoes until firm/tender, about 8 minutes. Drain well, and then place in a bowl. Add the remaining ingredients and toss to combine. Spread the potatoes in a single layer on the baking sheet.
Roast for 35 to 40 minutes, or until tender and richly coloured.
