Preheat the oven to 375 degrees F. Line a baking tray with parchment paper. Combine the first 5 ingredients in a wide, sided dish. Combine the mayonnaise, mustard and honey in a bowl. Add the chicken and toss to coat. Coat the chicken in the bread mixture, gently pressing it on to help it adhere. Place on the tray and bake for 40 to 45 minutes, or until cooked through. Cool to room temperature, then chill in the fridge for at least 2 hours before packing into an ice-cold cooler to enjoy at your picnic.
