Method

Preheat the oven to 350°F. Bring a large pot of water to a gentle simmer with a splash of white vinegar. (The vinegar helps the egg hold together once in the water.) Cut the scones in half and place on baking sheet. Top each with a piece of ham. Heat in the oven 10 minutes. Poach eggs to desired doneness. Place scones on plates, top with eggs and serve.

Serving Suggestions

If serving for breakfast, serve hash browns beside the eggs. If serving for brunch, toss a mixed green salad and serve it alongside the eggs.
