Preheat the oven to 350°F. Bring a large pot of water to a gentle simmer with a splash of white vinegar. (The vinegar helps the egg hold together once in the water.) Cut the scones in half and place on baking sheet. Top each with a piece of ham. Heat in the oven 10 minutes. Poach eggs to desired doneness. Place scones on plates, top with eggs and serve.
