Set two martini glasses in the freezer to chill.
Fill a cocktail shaker half full with ice. Pour in the vodka or gin, pomegranate juice and apple juice. Shake until too cold to hold. Place six pomegranate seeds into each chilled martini glass. Pour in the martini mixture. Garnish each glass with an apple wedge and serve.
Recipe Options: Make pomegranate pear martinis by replacing the apple juice and apple wedges with pear juice and pear wedges. For cranberry apple martinis, replace the pomegranate juice and seeds with cranberry juice and dried cranberries. For an added alcoholic punch, add a splash of apple brandy, such as calvados, to the martini mixture before shaking.
