Method

  1. For each of four salads, divide and mound greens on plate. 
  2. Artfully arrange melon, prosciutto and blackberries on top of greens. Top with pistachios, cheese and mint leaves, if using.
  3. Combine vinegar, oil, honey, salt and pepper in a salad bowl. Drizzle dressing on each salad and serve.

Serving Suggestions

Make a fine meal of this salad by serving it with slices of Italian-style bread, such as filone or Ciabatta, and some rose wine.
