Method

Preheat the oven to 375 degrees F. Season each chicken leg with pepper; wrap each leg with a half slice of the prosciutto. Place the chicken on a parchment paper-lined baking pan; bake for 30 minutes, or until cooked through. Make a pool of the heated tomato basil sauce on each of four plates. Set two chicken legs on each plate and serve.


Options: Instead of drumsticks, wrap and bake boneless, skinless chicken breasts in proscuitto. Baking time will be about 25 minutes for the breasts. For added flavour, rub the chicken with a mix of herbs and spices such as oregano, paprika and black pepper, before wrapping it with the prosciutto. If tomato basil pasta sauce is not your favourite, substitute it with one of the many other types of pasta sauce available.

Serving Suggestions

Serve this Italian-style chicken dish with pasta and a steamed green vegetable, such as broccoli or asparagus. After cooking the vegetable, drizzle with lemon juice and extra virgin olive oil, and then sprinkle with salt and freshly ground black pepper.
