Lay the half slices of prosciutto on a large work surface. Set a slice of mango at one end of each slice of prosciutto. Divide and top the mango with the goat cheese. Roll the prosciutto around the mango and goat cheese. To serve, set the prosciutto-wrapped bites on a platter and drizzle with balsamic vinegar.
