Method

Place all ingredients in a pot. Bring to a gentle simmer, cook 15 to 20 minutes and then serve. Add a little water to the chili if it becomes too thick.

Note: Bean medley, a canned mix of four beans, can be found alongside other canned beans sold at Thrifty Foods.

Serving Suggestions

Grated cheddar or jack cheese, sour cream or yogurt, chopped green onions or cilantro and/or guacamole are good ingredients to sprinkle or dollop on top of the chili. Taco chips are perfect for dipping in it.
