Combine the mayonnaise, mustard and honey in a small bowl. Set the tortillas flat on a work surface. Divide and spread the flavoured mayonnaise in the centre of the tortillas. Top the mayonnaise with rows of the roast beef, salad greens, cucumber, tomatoes and onion. Season all with salt and pepper. Fold the sides of each tortilla partially over the filling and then roll into a tight cylinder. Wrap each wrap in plastic wrap and refrigerate until needed. If desired, cut each wrap in half before serving.
