Preheat the oven to 400 degrees F. Cut the cauliflower into florets and place in bowl. Add all remaining ingredients, except the cilantro or parsley, and toss to combine. Set the cauliflower in a single layer in a casserole. Roast, uncovered, for 15 to 20 minutes, or until the cauliflower is tender and nicely browned. Sprinkle with cilantro or parsley before serving.

Recipe Options: Use vegetable oil, instead of butter, to roast the cauliflower. If you prefer it, flavour this dish with the juice of a lemon instead of lime. To make curry-roasted cauliflower, substitute the cumin and cayenne with 1 to 2 teaspoons of curry powder. For additional colour, add 1/2 cup of frozen peas to this dish 5 minutes before the cauliflower is pulled from the oven.
