Preheat the oven to 325 degrees F. Place the garlic and olive oil in a small baking dish. Cover and roast for 20 minutes, or until the garlic is tender. Transfer the garlic and oil to a bowl. Mash the garlic into small pieces with the back of a small spoon, and then cool to room temperature. Add the mayonnaise, lemon juice, paprika, cayenne and parsley and mix until well combined. Cover and refrigerate aioli until needed. Can be made a day before needed.

Serving Suggestions

Serve the aioli as a condiment or dip for one of the seafood stews, rice dishes or casseroles you’ll find in our recipe collection, such as Mediterranean-style Seafood Stew, Deluxe Seafood Bake, or Prawn and Sausage Paella. The aioli could also be used as a dip for raw vegetables, or as a spread for Mediterranean-style sandwiches, filled with such things a deli meats, cheese and grilled or roasted vegetables.
