Combine the first 5 ingredients in a small bowl, and then set aside. Divide and place the chopped romaine on 4 chilled salad plates; decorate the top of the lettuce with small pieces of the goat cheese, pomegranate seeds, pecans and mandarin orange segments. Drizzle with the dressing before serving.

Recipe Options: Instead of romaine, use another leafy green to make this salad, such as spinach or mixed organic salad greens. For a sharper taste, use blue cheese instead of goat cheese. Instead of pecans, use whole roasted almonds or cashews on this salad.
