Method

Boil the rotini in a generous amount of lightly salted water until just tender, about 8 minutes. Drain well, cool in cold water, drain well again and place in a salad bowl. Add all remaining ingredients and mix to combine. Cover and store in the fridge until ready to serve.

Serving Suggestions

Create a casual summer meal by serving this salad with burgers, hot dogs or sausages cooked on the barbecue. To round out the meal, add corn on the cob and a platter of crisp and colourful raw vegetables, such as bell peppers, broccoli, carrots and celery along with your favourite dip.
