Preheat your barbecue to medium-high. Brush the kabobs with the olive oil. Lightly oil the grill. Grill the kabobs 5 to 6 minutes, turning occasionally, or until the salmon is just cooked through. Warm the pita bread on the grill for a few seconds. Set a salmon skewer on each piece of pita; remove the wooden skewers. Allow diners to fold the pita into a sandwich once they’ve topped the salmon with the remaining ingredients.
