  1. Place first eight ingredients in a food processor and pulse until combined, but still slightly coarse in texture. 
  2. Place the wontons wrappers on a work surface. Brush the outer edges lightly with cold water. Divide and mound an equal amount of the shrimp mixture in the centre of each wrapper. 
  3. Push a prawn into the centre of the shrimp mixture, standing it tail side up. Lift up the corners of each wonton wrapper and gently squeeze the top to encase the shrimp mixture inside. 
  4. Line a bamboo or stainless steamer with lettuce leaves. Place dumplings in the steamer, ensuring they do not touch. Cover and steam over simmering water 5 minutes, or until just cooked through.

Serving Suggestions

Make a delicious dipping sauce for these dumplings by combining 1/2 cup rice vinegar, 1 tsp. chopped fresh ginger, 1 Tbsp. sugar, 2 tsp. sesame oil, 1 thinly sliced green onion, 2 Tbsp. soy sauce and 1/4 cup grated carrot in a bowl. Serve the sauce alongside the dumplings and dunk away.
