Toast bread slices and then spread with one side of each with mayonnaise. Divide, stack and layer two of the slices with the lettuce, shrimp, bacon, tomato and cheddar. Top with the remaining two bread slices, mayonnaise side down. Cut each sandwich into quarters and serve.
Recipe Options: Use your favourite loaf of sliced bread instead of whole wheat. Instead of using bread slices, divide and wrap the sandwich fillings in two tortilla shells. Use an equal amount of Dungeness crab or lobster meat instead of shrimp.
