Method

Line 4 plates with lettuce. Arrange orange slices around the outer edges. Place jicama, red pepper, oregano, olive oil, orange juice, lemon juice, honey, salt and pepper in a bowl and mix to combine. Mound the jicama mixture in the centre of the lettuce. Top with shrimp. Garnish with oregano sprig and serve.
