Method

Combine all the ingredients (except the salt and cilantro or parsley) in your slow-cooker. Cover and cook on the low setting for 8 hours. Season the stew with salt. Serve over steamed rice or couscous, sprinkle with chopped cilantro or parsley, and serve.

Note: This recipe is designed for an oval-shaped slow cooker with a 5 litre or more capacity.
