Heat the oil in a large skillet set over medium-high heat. Add the veal, brown on all sides, and place in your slow cooker. Add the remaining ingredients, except the sour cream and parsley, and stir to combine. Cover and cook on the low setting for 8 hours. Stir in the sour cream. Sprinkle servings with chopped parsley, if desired.

Note: This recipe is designed for an oval-shaped slow cooker with a 5 litre or more capacity.

Serving Suggestions

Serve this stroganoff on a bed of mashed potatoes, or on egg noodles tossed with a touch of melted butter and a sprinkling of chopped fresh parsley. It’s also good served with a vegetable or two, such as sliced, cooked carrots and steamed asparagus as side dishes.
