Method

Place the butter in a medium-sized pot and set over medium heat. Add the leek and garlic and cook 3 to 4 minutes. Mix in the flour, tomato paste and paprika and cook 1 to 2 minutes more. While stirring, gradually pour in the wine and stock. Bring the mixture to a gentle simmer and simmer 10 minutes. Mix in the salmon and dill and simmer 5 minutes more. Mix in the cream and season with salt and pepper. Ladle the bisque into heated bowls. Garnish each with a little smoked salmon and a dill sprig, if desired, before serving.

Serving Suggestions

This fine bisque can be served as a main course if accompanied with thick slices of one of our fine Brio Breads, such as Ciabatta, an Italian bread with wonderfully crisp crust, or Bavarian Farmer's Rye, a hardy, dense and nutritious bread with an abundance of flax, sunflower and sesame seeds.
