Method

Preheat oven to 425 degrees F. Arrange snapper fillets in a single layer in baking dish. Pour in stock. Place olives, feta and tomatoes around the fish. Drizzle with olive oil and lemon juice. Sprinkle with pepper and parsley. Bake 15-20 minutes, or until fish is cooked through. Divide fish and other dish ingredients on four plates.
