  1. Preheat your barbecue or indoor grill to medium-high heat. Combine the mayonnaise with Tabasco sauce or other hot sauce to taste, and then reserve in the fridge. 
  2. Season the burger patties with salt and pepper, and then grill until entirely cooked through, about 4 minutes per side. When cooked, the centre of each patty should be 160˚F (71˚C) or above when tested with an instant read meat thermometer. 
  3. Top burger patties with cheese and allow it to melt. Spread burger buns with the flavoured mayonnaise. Set a lettuce leaf on the bottom buns then add the burger. Top with avocado slices and salsa and serve.

Taco chips, wedge fries, baked potatoes, coleslaw, potato salad and corn on the cob are some of the side dishes that would go good with these burgers.
