Preheat the oven to 425 degrees F. Line a baking tray with parchment. Drain the oysters well and pat dry on paper towels; cut each in half widthwise. Place a half strip of bacon on a work surface. Set a half oyster at one end; roll the bacon around it and secure with a toothpick. Set on the baking tray; repeat with remaining oysters and bacon. Bake 5 minutes, then turn each oyster over and bake 5 minutes more. Drain the excess fat from oysters and set on a serving tray. Serve with cocktail or tartar sauce, if desired.
