Divide the whipping cream among 2 small pots and set each over medium heat. Bring each to just below a simmer; stir the white chocolate into one of the pots, and the dark chocolate into the other pot. Remove from heat and continue stirring until the chocolate is completely melted; stir a 1/2 tsp. of vanilla into each pot. Pour the chocolate mixture into separate dipping bowls and place on a platter. Surround with strawberries and serve immediately.

Recipe Options: Make milk-chocolate dipping sauce by using Belgian milk chocolate instead of Belgian dark chocolate. Simplify things and serve only one white, or dark, chocolate dipping sauce, choosing the one that appeals the most. If you do so, double the recipe of the one you make to ensure you have enough sauce for all the strawberries.

Serving Suggestions

You could also serve other fruits alongside the strawberries for dipping, such as dates, sliced starfruit and wedges of kiwi and pineapple. A small bowl of finely chopped nuts, such as walnuts or pecans, could also be served alongside, for dipping and adding texture to the strawberries once they have been dipped in the chocolate sauce.
