Combine the strawberries, ouzo, icing sugar and chopped mint in a bowl. Cover, refrigerate and let strawberries macerate 30 minutes. Divide the strawberries among decorative bowls or glasses. Divide and top with pistachios. Garnish with mint sprigs and serve. If desired, for added richness, top the strawberries with a little whipped cream, or vanilla ice cream.
