Place strawberries in a wide, non-skillet and sprinkle in icing sugar. Heat over medium heat until the sugar dissolves and the strawberries just heat through. Place a line of whipped cream and strawberries, reserving a little of both to decorate the top, down the centre of the crepes and roll them up. Place crepes on plates. Top each with remaining whipped cream and strawberries. Garnish with mint sprigs.
