Make a slit into the blossomed end of each strawberry used for garnish. Using the slit as a guide, set strawberry on the rim of each of 4 fluted or decorative glasses. Place the sliced strawberries, juice and liqueur in a blender. Pulse until smooth. Divide and pour the mixture into the glasses, filling each about 2/3 full. Top up with sparkling wine and serve.
To make non-alcoholic mimosas, replace the sparkling wine with sparkling water or soda water. For a more tart taste, use an equal mix of orange and grapefruit juice in the mimosas.
