Method

Wrap melon wedges with prosciutto. Artfully arrange them and the other antipasto ingredients on 4, first lining them with lettuce if desired, dinner plates. Spoon the dressing over the artichokes, red peppers, cheese and prawns. Serve with slices of your favourite Brio Bread.
