Method

Place all ingredients, except basil, in a large soup pot. Bring to a boil, and then reduce heat to a gentle simmer and cook 20 minutes, or until the vegetables are tender. Mix in the basil and adjust seasoning. Thin the soup with a little more stock if you find it too thick.

Note: Vegetable stock can be used instead of chicken.

Serving Suggestions

To serve this soup Italian style, sprinkle servings with freshly grated parmesan cheese and drizzle with a little extra virgin olive oil. Serve warm Alex Campbell Signature Series Brio Bread alongside.
