Method

Heat the oil in a deep-fat fryer to 350 degrees F. Preheat the oven to 200 degrees F. Set a wire rack over a baking sheet. Place the water and egg yolk in a bowl and whisk to combine. Whisk in the flour. Drain the oysters well and dry on paper towels. Dip into the batter, allowing the excess to drain away. Cook 3 to 4 at a time until crispy and very light golden in colour, about 3 minutes. Set on the prepared tray and keep warm in the oven until the others are cooked. Serve the oysters with dipping sauce alongside.

Serving Suggestions

Make a meal of these oysters by serving them with steamed rice and Asian-style coleslaw. To make the latter, combine 1/4 cup teriyaki sauce, 1/2 cup mayonnaise, 2 tsp. grated ginger, 2 Tbsp. toasted sesame seeds and 1 tsp. sesame oil in a bowl. Add 4 cups shredded green cabbage, 1 cup grated carrot and 3 finely chopped green onions and toss to combine. Serve immediately.
