Method

Combine the first 7 ingredients in a small bowl. Let olives marinate 1 hour. Divide the salad greens among 4 plates. Divide and fan the tomato slices on top of the greens. Drain the olives; reserve the marinade. Divide and set the olives on top of the tomatoes. Drizzle each salad with some of the reserved marinade. Top each salad with 2 slices of prosciutto and a basil sprig and serve.

Serving Suggestions

Make a lunch of this salad by serving it with wedges of cheese, such as Gorgonzola or Asiago, and slices of bread, such as olive, filone or focaccia bread.
