Arrange 6 to 7 tomato slices in an overlapping circle on each of 4 plates. Divide and intersperse the basil leaves among the tomato slices. Divide and place small nuggets of the cheese on top of the tomatoes. Drizzle with the oil and vinegar. Sprinkle with the pine nuts, salt and pepper and serve.
Note: To toast the pine nuts, place in a single layer in a baking pan. Bake, shaking the pan from time to time, in a 350 degree F oven for 10 to 15 minutes, or until lightly toasted.
