Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper. Brush the paper with the oil. Place the crushed tortilla chips on a wide plate. Combine the mayonnaise, Tabasco, cumin and lime juice in a medium bowl. Add the chicken and toss to thoroughly coat. Coat the chicken in the crushed tortillas, gently pressing them on to help them adhere.
Set the chicken strips on the baking sheet. Bake for 10 minutes, then turn the chicken over and bake 8 to 10 minutes more, or until cooked through. Arrange the chicken on a platter. If desired serve with salsa for dipping.
Note: Chicken breast fillets are tender strips from the breast that poultry processors remove and sell separately. You’ll find them in the meat department display case.

Serving Suggestions

Serve the chicken with a couple of side dishes you create from recipes in our website collection, such as Baking Potato Oven-Fries, and Asian Vegetable Slaw. If you make the oven-fries, cook the chicken strips first, and pop them back into the oven to reheat just before the oven-fries are ready.
