Place the first five ingredients into a medium-sized pot and set over medium heat. Bring to a gentle simmer. Simmer, stirring occasionally, until the mixture becomes fluid and the cranberries begin to just fall apart, about 15 minutes. Remove from the heat, cool to room temperature, transfer to a serving dish, cover and keep in the fridge until the turkey is ready (can be made a day in advance). Preheat the oven to 350 degrees F. Place the turkey in a roasting pan. Brush with melted butter; sprinkle with sage, salt and pepper. Roast for 75 minutes, or until the centre reaches 185 degrees F on an instant read meat thermometer. Remove the turkey from the pan and set on a plate; cover with foil and allow it to rest 10 minutes. Thinly slice the turkey and serve the cranberry sauce alongside.
