Place the turkey and onion in a medium pot and set
over medium to medium-high heat. Cook, stirring, until the meat is entirely cooked through and crumbly. Drain away any excess liquid. Add the chili powder, cumin, tomato sauce, stock and honey. Bring to a gentle simmer, adjusting the heat until this is achieved. Simmer about 10 minutes, until the turkey mixture is rich, thick and tasty. Taste mixture and season with salt and pepper, if needed. Divide turkey mixture among the taco shells and let diners top as desired.
