Preheat the oven to 350 degrees F. Place the pork bone-side down in a roasting pan. Combine remaining ingredients in a small bowl. Brush mixture over the top and sides of the pork. Roast, basting with pan juices later on in the cooking process, 90 minutes, or until a thermometer inserted in the centre of the pork registers 160 degrees F. Rest 10 minutes to allow juices to set before slicing.

Serving Suggestions

Try this pork with orzo salad. To make it, cook 3/4 cup orzo (rice-shaped pasta) in lightly salted, boiling water until just tender. Drain well, cool in cold water, then drain well again and place in a bowl. Mix in 2 Tbsp. of olive oil, 2 crushed garlic cloves, 1/3 cup black olives, 2 chopped fresh tomatoes, 1/4 cup chopped basil, 1/4 cup freshly grated Parmesan cheese, and salt and pepper to taste. Store the salad in the fridge until the pork ready.
