Try this pork with orzo salad. To make it, cook 3/4 cup orzo (rice-shaped pasta) in lightly salted, boiling water until just tender. Drain well, cool in cold water, then drain well again and place in a bowl. Mix in 2 Tbsp. of olive oil, 2 crushed garlic cloves, 1/3 cup black olives, 2 chopped fresh tomatoes, 1/4 cup chopped basil, 1/4 cup freshly grated Parmesan cheese, and salt and pepper to taste. Store the salad in the fridge until the pork ready.
