Place the first six ingredients in a pot and bring to a gentle simmer over medium heat. Simmer for 15 to 20 minutes. Boil or grill the hot dogs until heated through. Place the hot dogs in the buns, top with the chili and serve immediately.
Options: Make these chili dogs even more delicious by topping the chili, once spooned over the veggie dogs, with grated cheddar cheese, finely chopped red onion and chopped fresh cilantro. If you’re not vegetarian, regular hot dogs work just as well for this.
