- Place the carrots and vegetable stock in a small pot set over medium, medium-high heat. Bring to a simmer and cook carrots until tender, about 8 minutes. Add pineapple and heat through 1 minute, then remove pot from the heat.
- Place remaining ingredients in a blender. Now add the carrots, pineapple and the liquid in the pot. Puree the mixture, and then immediately pour into glasses and serve.
Note: Peeled, cubed tubs of fresh pineapple are sold in our Produce Department.
Recipe Options: Instead of dried ground turmeric, use peeled and finely grated fresh turmeric in the smoothie. Fresh turmeric is seasonally available in our Produce Department.
