Method

Place watermelon on a plastic wrap or parchment-lined cookie sheet and freeze. Once frozen, place the watermelon in a blender or food processor with the sherbet and lemon juice. Pulse until smooth. Pour into glasses, garnish with watermelon wedges and mint, and serve immediately.
