  1. Place the dates, whey protein, coconut almond butter, juice (or water), spices and salt in a food processor and blend until it becomes like a paste. You’ll need to scrape down the sides of the bowl a few times during this process.
  2. Add the cranberries, pumpkin seeds and 3 Tbsp. of the coconut and pulse until these ingredients are blended into the date mixture, but still small, visible pieces of them appear.
  3. Line a small baking sheet with plastic wrap. Use spatula to scoop the sticky date mixture into the centre of the plastic wrap.
  4. Very lightly moisten your hands with cold water, and then press and form date mixture into a rectangle that’s 6" long, 4" wide and about 1/2" thick. Wrap the date mixture in the plastic wrap and set in the freezer on the baking sheet for 15 minutes to firm up.
  5. Unwrap the date mixture and set on a cutting board. Use a sharp knife to cut it into 6, 1" wide bars. Press the edges of the bars together if they’ve frayed a bit during cutting.
  6. Spread the remaining coconut on a plate. Lightly coat each bar with coconut, gently pressing it on to help it adhere. Individually wrap each bar in plastic wrap or wax paper and keep refrigerated until ready to enjoy. Refrigerated bars will keep up to a month.
