Place the strawberries and maple syrup in a bowl and gently toss to combine. Cover and store at room temperature until needed. Combine the eggs, milk, orange juice and cinnamon in a wide, sided dish. Dip and soak the bread slices in the egg mixture for a few minutes. Place 2 large skillets over medium heat and divide the butter among them. When the butter is melted, add 4 bread slices to each skillet and cook 3 to 4 minutes per side, or until golden brown. Set 2 pieces of french toast on each of four plates. Generously top with the strawberries, garnish with mint, and serve.
Recipe Options: Instead of whole wheat bread, this recipe, of course, can be made with regular white or French bread. Instead of just strawberries, use a mix of maple syrup-sweetened whole and sliced fresh berries, such as whole blueberries, raspberries, blackberries, and sliced strawberries. Instead of skim milk, use whole or 2% milk in the egg mixture.
